The Bachelor of Science in Culinary Arts, residential and online, is designed to enhance the professionalism within the multifaceted food industry through education based in practice, science, and a strong regard for tradition and quality. The major requires 45 credit hours of course work. The schedule of course offerings permits an individual working full time to complete all the requirements for the major in 7 semesters (two classes per term). Students are required to have an Associate's degree Culinary Arts or equivalent to enter the major. In this program, students combine what they've learned about the culinary arts with what they need to know to own or run their own restaurants or food service operations. They learn how to: Develop and employ menu planning, purchasing, pricing, prep, and presentation techniques -- all designed to maximize the guest experience. Demonstrate competence in advanced techniques of food preparation and presentation. Apply problem-solving techniques in maintaining kitchen morale, safety,and building team spirit. Demonstrate appropriate work ethic attitudes such as punctuality,professional business communications, standards, and expectations. Prepare a plan to locate property, and design a new or expanded facility including its arrangement, operation, and maintenance for efficiency and safety. Demonstrate creativity and sound thinking in solving management problems and in marketing techniques. Keep accurate business records and understand the relationships between financial profits and good business ethics.
