Program Mission and Goals
The mission of the BS program in Nutrition and Food Sciences is to educate students in the areas of food science, nutrition, and foodservice management. The BS degree will prepare students to apply their knowledge and skills for careers that require a Registered Dietitian (RD) credential, other nutrition-related careers, and careers in foodservice administration.The option in General Dietetics meet the requirements of the American Dietetic Association (ADA) for an accredited Didactic Program in Dietetics (DPD).
The goals of the BS program in Nutrition and Food Sciences are to:
instill personal and professional attitudes and values, the importance of teamwork, and leadership skills relevant to the practices of dietetics and foodservice administration.
provide pre-professional practice opportunities that benefit students while serving the North State community.
graduate competent-entry level practitioners who obtain employment in dietetics, foodservice administration or related fields.
prepare students to serve the cultural diversity in the CSUC service area.
use program resources effectively and efficiently while maintaining quality.
Student Learning Outcomes
Students graduating with a B.S. in Nutrition and Food Sciences with an option in General Dietetics (D) or Foodservice Administration (FA) will:
demonstrate the ability to communicate effectively (D and FA).
be able to demonstrate their understanding of physical and biological sciences (D and FA).
demonstrate their understanding of the role of nutrients and food in the achievement and maintenance of human health and well-being (D and FA).
demonstrate their ability critically to evaluate research and project plans (D).
demonstrate their ability to use efficiently and effectively the techniques and tools for managing foodservice systems (D and FA).
have knowledge of health care systems (D).
have knowledge of social aspects of individuals and groups and public policy development (D).
demonstrate their understanding of the role of nutrients and food in the achievement and maintenance of human health and well-being (D and FA).
