There are two curricular options in the undergraduate program: nutritional science and dietetics. The nutritional science option provides a strong background in the biological and chemical sciences and prepares students for graduate study in nutrition or any of the life sciences or for entry into medical, dental or veterinary school. This option also prepares students for entry-level employment in areas such as biomedical research, public health, the communications industry or the pharmaceutical industry.

The dietetics option is designed for students who want to earn the professional credential "Registered Dietitian". Registered Dietitians work in hospitals, clinics or physician’s offices as part of the health care team. They provide information to clients on diets that will prevent or treat many diseases. Registered Dietitians may also work as consultants to professional sports teams, restaurants or corporations interested in designing wellness programs. They are qualified for careers in areas such as foodservice management, public health, health communications, and food product development. After completing the dietetics option students must complete an American Dietetics Association (ADA) accredited Dietetic Internship to be eligible to take the Registration Exam of the ADA and earn the credential "Registered Dietitian".
