Nutrition science involves the role of nutrients in the growth, development, health, and well-being of humans. Nutritional science students have the opportunity to learn how to promote a healthy change in the community and ultimately, become a leader in nutrition. The nutritional science degree program provides students with a strong foundation in science in order to understand the relationships among food, nutrients, eating behavior, and human health. As part of this program, students will explore why we make the food choices we do and learn how to assist others in modifying their diet and eating behaviors. Students will examine how what we eat affects our physical and even our psychological well-being to determine the best intake of individual nutrients, specific foods, and food groups.The field of nutritional science is embedded in the study of natural sciences, social sciences, and health sciences. It includes instruction in food science, biochemistry, chemistry of food, physiology, advanced and community nutrition, psychology, food preservation, dietetics, and nutrition studies. Students will also study the relationships between diet and health. Upon completion of the nutritional science degree, individuals will have a sound understanding of nutrient functions, sources, and requirements. This program prepares students for careers in nutrition, dietetics, food service administration, food technology, food science, and community nutrition.
